Kabocha Saba

Experience a taste of autumn with seared mackerel and pumpkin cream

We start our Omakase experience with Kabocha Saba: seared mackerel accompanied by a silky pumpkin cream, persimmons, miso ricotta, and chives. This dish embodies the subtle sweetness and warm tones of autumn, offering a delicate yet memorable introduction.

Autumn Hassun

Five bites inspired by the richness of the season

Our Autumn Hassun course is a beautiful assortment of five bites, each capturing the essence of fall:

Tsukemono: A warming and tangy start of pickled daikon radish, flavored with kombu, red pepper, and shiso purple vinegar.
Hamachi Tartare: Served on its crispy skin chip with jalapeno, shallot, and yuzu kosho.
Ponzu Awabi Hotate: A luxurious bite of Abalone and Scallop on sunchoke cream with maoi caviar.
King Oyster Nigiri: Classically stewed king oyster topped with roasted nori for an earthy depth.
Bruleed Tamagoyaki: A familiar and sweet finish to complete this celebration of seasonal flavors.

Mori Nosanpo pt.1

Foie gras and autumn mushrooms come together in harmony

For an indulgent autumn treat, we present Mori Nosanpo pt.1: furikake-crusted foie gras served with brioche croutons, with black chanterelles, shimeji, chestnut cream, and a hint of yuzu crumble. Rich and earthy, this course beautifully embodies the essence of fall.

Aigamoniku

Duck with a seasonal twist, combining smoky and sweet flavors

The main course, Aigamoniku, features charcoal-grilled duck complemented by yuzu kosho parsnip cream, beetroot tuile and sauce, beetroot hangop, candied figs, and umeshu pearls. This dish captures the richness of autumn with its perfect balance of smoky, savory, and subtly sweet notes.
